There are pasta ranging from different shapes, colour and price in supermarket, but how do we spot the beSupermarkets have a wide variety of pasta shapes, colors, and prices, but how can we tell which one is the best quality, not just the cheapest? Here are some helpful tips to keep in mind:

  1. Take a close look at the pasta. High-quality dry pasta should look more rustic, dusty, opaque, dull in color, and have a rough surface. Bright and amber yellow pasta is usually low-quality pasta that’s been mass-produced. This is because high-quality pasta is often bronzed-drawn in a slow process and dried at low temperatures, while low-quality pasta is made in a fast process with plastic dies and dried at high temperatures, which literally causes most of the starch to be lost.
  2. After cooking the pasta and before draining, check if the water is cloudy or not. Good-quality pasta should release less starch into the water, so the water should be clearer than low-quality pasta.
  3. When the good-quality pasta is cooked, it should be a grayish-amber color, not yellow. It should also be rough, opaque, porous, and free from cracks. A good dish of pasta should still have the smell of wheat. This is because the best combination of eating sensation comes from pasta that’s cooked properly.
